BBQ Pulled Chicken Sliders

Ingredients

For the Pulled Chicken:

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup BBQ sauce (divided)
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper to taste

For Assembly:

  • 12 slider buns or Hawaiian sweet rolls
  • 1 1/2 cups coleslaw mix
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Pickle slices
  • Extra BBQ sauce for serving

Instructions

Prepare the Chicken:

  1. Season chicken with salt, pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper.
  2. Place seasoned chicken in slow cooker or large pot.
  3. Mix together 1/2 cup BBQ sauce, brown sugar, apple cider vinegar, and Worcestershire sauce.
  4. Pour mixture over chicken.

Cook the Chicken:

  • Slow Cooker Method: Cook on low for 6-7 hours or high for 3-4 hours until chicken shreds easily.
  • Stovetop Method: Simmer covered for 45-60 minutes until tender.
  • Oven Method: Bake at 325°F for 1.5-2 hours covered.

Shred and Finish:

  1. Remove chicken and shred using two forks.
  2. Mix shredded chicken with remaining 1/2 cup BBQ sauce.
  3. Adjust seasoning to taste.

Make the Coleslaw:

  1. Combine coleslaw mix, mayonnaise, vinegar, and sugar.
  2. Season with salt and pepper.
  3. Let sit for 15 minutes to meld flavors.

Assemble Sliders:

  1. Lightly toast slider buns if desired.
  2. Place generous portion of pulled chicken on bottom bun.
  3. Top with coleslaw and pickle slices.
  4. Add top bun and serve immediately.

Prep Time: 15 minutes
Cook Time: 3-7 hours (depending on method)
Serves: 12 sliders
