Ingredients

  • 3 cups whole milk, warmed
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 oz sharp cheddar cheese, freshly grated
  • 4 oz Gruyère cheese, freshly grated
  • 4 oz cream cheese, softened

For the Topping:

  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 3 tablespoons melted butter
  • 1/4 teaspoon paprika
  • Fresh chives for garnish (optional)

Instructions

Step 1: Prepare the Oven and Pasta

  1. Preheat oven to 375°F (190°C)
  2. Grease a 9×13 inch baking dish with butter
  3. Bring a large pot of water to boil, add salt
  4. Cook pasta according to package directions until al dente (about 1 minute less than package suggests)
  5. Drain and set aside

Step 2: Make the Cheese Sauce

  1. In a large saucepan, melt butter over medium heat
  2. Whisk in flour and cook for 1-2 minutes until lightly golden (this is your roux)
  3. Gradually whisk in warm milk, ensuring no lumps form
  4. Add Dijon mustard, garlic powder, onion powder, cayenne, salt, and pepper

  6. Remove from heat and whisk in cream cheese until smooth

  2. Transfer mixture to the prepared baking dish
  3. In a small bowl, combine panko breadcrumbs, Parmesan cheese, melted butter, and paprika
  4. Sprinkle breadcrumb mixture evenly over the mac and cheese
