Ingredients
For the Pulled Chicken:
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 cup BBQ sauce (divided)
- 1/4 cup brown sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- Salt and black pepper to taste


For Assembly:
- 12 slider buns or Hawaiian sweet rolls
- 1 1/2 cups coleslaw mix
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- Pickle slices
- Extra BBQ sauce for serving
Instructions
Prepare the Chicken:
- Season chicken with salt, pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper.
- Place seasoned chicken in slow cooker or large pot.
- Mix together 1/2 cup BBQ sauce, brown sugar, apple cider vinegar, and Worcestershire sauce.
- Pour mixture over chicken.
Cook the Chicken:
- Slow Cooker Method: Cook on low for 6-7 hours or high for 3-4 hours until chicken shreds easily.
- Stovetop Method: Simmer covered for 45-60 minutes until tender.
- Oven Method: Bake at 325°F for 1.5-2 hours covered.



Shred and Finish:
- Remove chicken and shred using two forks.
- Mix shredded chicken with remaining 1/2 cup BBQ sauce.
- Adjust seasoning to taste.
Make the Coleslaw:
- Combine coleslaw mix, mayonnaise, vinegar, and sugar.
- Season with salt and pepper.
- Let sit for 15 minutes to meld flavors.



Assemble Sliders:
- Lightly toast slider buns if desired.
- Place generous portion of pulled chicken on bottom bun.
- Top with coleslaw and pickle slices.
- Add top bun and serve immediately.
